Cannibal Creek Winery, Tynong

Cannibal Creek Chardonnay 2005

Description

Creamed honey and rich melon aromas combine with yeasty characters on the nose. There is cleansing acidity on the palate and firm structure enhanced by the use of French oak barriques.13.5 alc/vol. 8 std drinks. Diam Closure.

Wine Making

  • Barrel fermented in new and older oak aiming at the a minimum of 30% new wood. We carefully monitor malolactic fermentation to achieve the right balance and we control the temperature of ferments in the barrels, below 23 deg C at all times.
  • Minimal handling is important and we try to only handle the wine when really necessarily so we retain fruit freshness and a clean palate.

Cannibal Creek Pinot Noir 2006

Description

Violets and cherry aromas, and a delicate but concentrated mix of savoury characters on the palate makes this pinot a smooth and complex wine.
